you can speed up your crafting using magic or gold if you click on the crafting building. You can also have more than medicine wagon and other crafting buildings and resources. I recommend having the maximum of each (work houses, medicine wagons, chef's kitchens, tailors, tanning racks, windmills, granaries.)

This has also been problematic in instances where I've searched very tiny grids of fog, wasting my very limited supply of oil, when all I really wanted to do was send a worker to harvest a peach tree or something. A 'cancel action' option is available in almost every game for just these situations. Why isn't it an option in GoM?

I have found that you can cancel your action by changing screens before the avatar reaches the assigned task. Just click on a neighbor or an alternate map (Camp site, swamp, gypsy rug) and your avatar will reach the assigned place and then wait for you to make the request again since they haven't started. Hope this helps

True. That can speed it up so you can clear out your house. But we still waste items and magic on something we didn't want in the first place.

I've noticed that but it doesn't work on fog-clearing, I think. I've tried to do it but I come back with one oil less.

Yep a Cancel Button its needed.
When I craft Lampoil and then came a Quest who need my Working House and i won´t use Magic to finished the Crafting then was a Cancel Button Helpfull
